Genetic Improvement of Quality Among Selected Vegetables

Abstract
Vegetable breeders have made significant strides st enhancing yield, disease resistance, and many other economically important traits of various vegetables. In contrast, improvement in quality which is ultimately the most important has been very slow if not lacking. The clamor for good quality vegetables and their product from an increasingly well-informed consumer sector has grown in some countries in recent years and this has understandably resulted in an intensification of research to gain a hatter understanding of what quality really is and to assess potentials for its improvement. A review of quality enhancement through breeding is presented here, particularly with reference to improvement of components such as external appearance, nutritional composition, eating quality (flavor and texture), and some important aspects of processing.
